Abstract

Promoting insects as food in Western countries is not an easy task. This research aims at investigating insect-based food consumption patterns in Generation Z consumers, especially focusing on how to increase willingness to eat of insect-based food. Specifically, with a mixed method approach (i.e. interviews to key stakeholders such as insect-based food companies, influencers, chefs, etc. and two quantitative studies) we show that if entomophagy is properly communicated to consumers and hence consumers are well-informed about the benefits related to such novel and alternative food consumption, willingness to eat insect-based food tends to increase. We offer theoretical and managerial implications of these results that can be of particular interest for the different players of the food industry and discuss the role of entomophagy, which has the potential to contribute to both individual food well-being, health and sustainability, in Western food cultures, particularly in Italy and Switzerland.
